Gastronomy :
Pine nut oil has a subtle and slightly sweet flavor. It combines marvelously with avocadoes, goes well with lemon juice, adds a lovely touch to grilled fish. It is ideal for dipping crab or lobster, making a wide array of different sauces (especially those with a wine base), for soups such as minestrone, and absolutely divine in pesto.
For a treat, drizzle a little onto goat cheeses to add a note of toasted bread that is simply scrumptuous. |
Botany :
The parasol pine, Pinus pinea, belongs to the Pinaceae family. It is a resinous forest tree that forms a parasol shape and can reach up to 30 meters in height. We encounter it in wild pine forests of Mediterranean countries, as well as in China, Korea, and the USA.
Its leaves are clustered needles, of a dark green color, and measure about 20 centimeters in length.
The fruit is a globulous, ovoid cone, of a reddish brown color, called a pine cone. At the end of about three years, as the scales of the cone open, they release winged and edible, but hardshelled seeds.
The seed contains an oleaginous inner nut, which ressembles a grain of rice.
The oil pressed from these nuts is of a light yellow color and sweet flavor. |

COULOR : Brilliant golden yellow
AROMAS : A present to dominant toasted note but of average definition, with slight overtones of toasted bread and dried mushrooms
FLAVORS : Weak viscosity, light and airy but extremely aromatic with toasted notes (bread, almonds, hazelnuts) mingled with pine sap and cedar resin. Very powerful woody tones ; a very lingering and delicately ardent finale
CONCLUSION /HARMONY : Great purity and strong personality, very complex in combination with pesto pasta, salads mixed with pine nuts, grilled veal rib, it is a very noble oil.
