This charming ebony-coated rice was long ago restricted to the Chinese emperors. It was named the forbidden rice due to the nutritional and aphrodisiac qualities for which it was known. This certified organic black rice has preserved its germ and its bran, two significant sources of vitamins and fiber. Thanks to an old-fashioned stone husking method and a meticulous selection, this rice can boast of an extra quality. Black rice is gifted with an aroma varying between sandalwood and freshly-baked bread. Its taste reminds of hazelnut and it reveals a tender purple colour after cooking. It accompanies lobster, salmon and other seafood in starters, risottos or salad. Cook it for 40 minutes in boiling water, and season with a knob of butter or a line of olive oil.
