Pasta with wheat Germ & Squid ink

Utilisations

Those pasta are unique. The secret lies in an ingredient never found in other pasta: wheat germ, the very heart of the grain, which contains vitamins and vegetable proteins. The wheat germ is usually removed from the grain during grinding in order to reduce its perishability. Within this traditional process, fresh wheat germ is reincorporated into the semolina.

Cooking : Bring to the boil 4 litres of water. Add 12 g of salt and put the pasta in it. Stir occasionally and light drain the pasta when cooked : 7 to 8 min. Serve with extra virgin olive oil, cheese, sauces.

Durum wheat semolina 94.8%, wheat germ 4.3%, squid ink 1%.
