Matured Selection : Cold-pressed oil extracted from ripe olives having been stocked for some days as part of a controlled maturation process. An extremely gentle oil, free of vegetal aromas, without bitterness or pungency. Subtle aromas of black olive, chocolate, cocoa, smoke...To be enjoyed especially with meats such as game and offal, but also with shellfish, or as finishing on steamed vegetables. Make sure to taste the Green Selection as well.
