Sichuan pepper (or Szechuan) is named after a region of central China where it has been traditionally grown for centuries. This very scented berry has a mild anaesthetic property that slightly numbs the palate before releasing its peppery taste, delicately lemony and woody. It is part of the famous five-spice blend.Sichuan pepper seasons perfectly dishes of meat and poultry as well as starchy foods, but can also be used to flavour salads and desserts, especially those with chocolate.
