DEFINITIONS


What is a "virgin" oil ?
=>The use of the term "Virgin Oil" is under strict regulation. Only oils that are extracted using purely mechanical methods, and clarified only through physical manipulation, without any kind of chemical treatment or refining qualify for the title of "virgin".
In simple, the fruit or seed is crushed and the oil expressed from it is decanted, then eventually filtered. Through this method of extraction, the oils have their full flavor and perfume intact, because they do not undergo any refinement or deodorization.


What differentiates a 1, 2, 3 or 4 Leaf Balsamic Vinegar ?

The Leaf system is a new indication of the quality of a Balsamic Vinegar. Whereas the Traditional Balsamic Vinegar of Modena is reserved for special occasions and can be selected by its degree of aging (12 to 25 years), the legislation does not allow the indication of age for the vinegars we consume on a regular basis, as it is possible to combine vinegars in the process of making from one barrel to another, in order to maintain a consistency within the product.
The sign of the Leaf, symbolized by grape leaves, was therefore created to indicate the degree of maturation of a vinegar : 1 Leaf corresponds to a young vinegar, 4 Leaf corresponds to an well aged vinegar.
The more aged the vinegar, the more sweet and less acidic it is.

COOKING and CONSERVATION


Can one heat Colza oil ?

 The French regulations forbid the heating of this oil, which has 2% linolenic acid or omega 3. A study is in process in order to reconsider this regulation, which does not exist in other countries.


Can one fry with grapeseed oil ?

Grapeseed oil is a good cooking oil which withstands high temperatures.


Can one use all the olive oils for cooking ?

Olive oil is a good cooking oil.
All the olive oils can be used to cook. Preferably, us an olive oil of ordinary quality for cooking while reserving the very high quality olive oils just for delicately seasoning or adding the finishing touches to your already cooked dishes.

CONSERVATION


How long does the hazelnut oil keep after opening ?

Our hazelnut oil can keep about one year after opening, which is the case for all our oils, as the nuts and seeds are analyzed before being pressed. Nuts and seeds that are not healthy and can start a process of decay in the oil are eliminated.


It seems preferable to keep oils out of the light, is this true for all the oils ?

Factors in the degradation of an oil are light and heat. Keeping your oil in a kitchen cupboard, or the door of the refrigerator for the walnut oil, is a guarantee for good conservation.


Are oils with the label AOC organically certified ?

The AOC and organic labels are independent entities:
- The label AOC is obtained if the requirements for production as defined by the AOC controlling entity for the specific region are respected: geographical growing zone, variety of olives, method of agriculture, method of collection …
- the label for Organic Certification (= Agriculture Biologique, AB) is granted if no chemical treatment has been used throughout the production process : agriculture, and transformation of the product. The label is attributed by a specialized controlling entity.

I use many of the oils in my cuisine. and I would like to share some of my recipes. Who should I contact ?

In our site, you will find a header called "Recipes" where you can submit your recipes yourself. To do this, click on "add your recipe", enter the information according to the appropriate fields, and once you have filled out the required sections, click on "add the recipe". That's all.


Can I replace peanuts in a recipe with a bit of the roasted peanut oil ?

Of course ! The peanut oil of Mille et une Huiles is a virgin oil obtained through exclusively mechanical procedures. Lightly roasted, the peanuts create an oil which delivers all the powerful flavor and nutritional qualities of the nut itself. Just a drizzle of the oil on salads or on hot dishes is enough to rediscover the true peanut taste. This is true for our whole selection of "Nut and Seed Oils".

You order in complete security; after you are identified on our site, you enter a secured site, for your descretion.
For maximum security, the last step of the ordering process, that of credit card payment is made directly on the site of our bank, le Credit Agricole, their secure site guarantees complete security.

PAYMENT


If I pay with a credit card, how can I be sure the transaction is secure ?

The transaction is made on our bank's own site : Le Crédit Agricole. It is the bank that guarantees you maximum security on their secure server, as in the case of paying at a shop.


How can I pay with a check ?

At the end of your online ordering process on our site, chose payment with check, validate your order and print the invoice if you would like. We receive your order by email and will ship your order upon receiving your check to Mille et Une Huiles at the following address :

LOGIN & PASSWORD


I lost my password, what should I do ?

On our client Sign in page, for returning customers, click on "I lost my password". Enter your email address and we will immediately send a provisional password to your email address. With this new password you can come back to our site and enter it into appropriate password field in the Sign In page. You can thus complete your order.
- You can then change your password using one of your own choice : after signing in using the provisional password, click on "My account" (in the green navigational heading bar connected to the "Online Shop" header). Next, click on "Change my account password". Enter the provisional password under "current password", then enter your new password, and confirm it in the following lines. Click on "Continue", and it's done !

SHIPPING


What are the shipping costs ?

The price of shipping our products is degressive according to your order, and also varies according to shipping destination.
If you order less than 30 euros worth of products, you pay 15 euros of shipping costs. For orders between 30 and 50 euros, shipping costs 10 euros. Orders between 50 and 100 euros, shipping costs 5 euros, and for orders over 100 euros, we'll give you the the shipping for free.

How are the orders shipped ? Is my purchase shipped to my home address ?
Our products are shipped by Colissimo and require signing upon delivery. Your package is delivered to your home, in the same manner as a postal package.

The products are packaged and shipped by tracked Colissimo in France and in Europe with La Poste.
Shipping takes from 3 to 6 days in France, and between 5 to 15 in Europe.
