Sherry wine vinegar: Jerez vinegar is used at the last moment, without cooking. Unique flavour, unctuous, with woody and earthy tones. Use in a vinaigrette, or pour a small spoon into the cooking juices of poultry, fish, vegetables, fruits, right before serving.
