Utilisations
This gentle and smooth multi-flower honey has been collected from an area covered by the Mediterranean flora: sage flowers, lavender, orange, rapeseed. The honey combs are uncapped manually with a knife and then cold-extracted at around 30°C by mechanical centrifugation. This honey should be stored at ambient temperature, preferably around 20°C.
Sweet with a creamy texture, it can be used to caramelize duck, and slather fish or lamb. In dessert, it can be enjoyed with seasonal fruit salads, milkshakes, or yoghurt.
