The Carnaroli rice is perfect for the preparation of one of the most traditionnal Italian dishes: the risotto. Its plump, medium-sized grains have a great power of absorption of cooking stocks and seasonnings. A tasty risotto is the result of Carnaroli rice slowly cooked in meat, vegetables, mushroom or seafood stock with a cup of white wine. The wine should be slowly added as the rice absorbs it. The final touch: add some parmesan cheese and salted butter at the last moment before serving it as a starter, a main dish or in small glasses for appetizer.
