Utilisations

This is a unique sort of pasta. In addition to the unique taste revealed by the presence of truffle, the secret lies in an ingredient never found in other pasta: wheat germ, the very heart of the grain, which contains vitamins, vegetable proteins and minerals. The wheat germ is usually removed from the grain during grinding in order to reduce its perishability. In this traditional process, fresh wheat germ is reincorporated into the semolina while it is still fresh. In cooking, the deep wheat aroma released along with truffle smell can seduce one.

Durum wheat semolina 85.8%, eggs 8.6%, wheat germs 3.4%, summer truffle 1.3% (Tuber Aestivum Vitt), aroma 0.9%.
